Caribbean Inspired Spicy Potato Soup

An Autumn favourite of mine, Soup is a special thing. Every time I have a soup I always say I could eat soup every day. Like a warm comforting hug that makes its way into your chest. Wholesome, healthy, textured and filling. The first person I ever saw making a soup was my dad, Killian. He was always adventurous in the kitchen, having worked at a hotel as a young man and then growing his own vegetables, his soups were always the best. The art of it all was even more special because there never was a specific recipe or ingredients. I was as though the kind of day he had and the mood he was in would determine the ingredients and outcome, and this is exactly how I have learnt to cook. No recipe, no particular method (unless baking), just my imagination and

Another favourite thing of mine about soup is that leftovers are easily reusable especially any stock left over from meat. Now as I was making my Honey BBQ Chicken Wings, I had some chicken stock left over and thought it would work great with potato soup. I felt sweet corn would add a nice sweet and uplifting dimension to the spices and the red kidney beans some depth and earthy tones to complement the warmth of the soup.
